okay, so while I have been not so patiently waiting to be done with the paperwork chase, I have been cooking ethiopian food at least once a week. Over a month ago, we went to an ethiopian restaurant in NJ, and I loved loved loved it. Especially a dish named kik aletcha. It is made from yellow split peas and fresh veggies and spices and I could eat it for breakfast, lunch, and dinner (and many days I do:)!. So, today I decided to tackle making homemade injera - the bread-like food that you scoop up stews, meats, and veggies with. When I have had it in the the past, it has been almost bitter, and I have not been able to get my kids to take more than a bite (even noah - and he will try anything and usually love it). All of the recipes that I have found say that you have to make a starter, and feed it, and for those of you that know me - that is not going to happen:). So, back to the internet, and about two weeks ago I found a recipe that uses teff (the main flour from ethiopia), whole wheat flour, and self rising flour. It was so easy - and probably not totally authentic because of the different types of flour and not using a starter - but it was delicious! It did not have the bitter taste, and my kids loved it!!!! all three of them! So, by the time Kyria comes home, we will probably be sick of this dish:). If any of you have any yummy ethiopian recipes, please let me know! And please be praying - i am going in to my hospital tomorrow morning to try to get another employment verification letter - and then hopefully overnighting it to oregon! I'll let you know....

another bump in our adoption road - we had thought that we would be a number on the waiting list today, but alas - it was not to be. My employment verification did not include my annual salary (probably because I am per diem and do not have a salary!), so I have to do it again. After two hours of wailing and crying, I think that my tear ducts are empty. My poor children - obviously I do not cry around them enough, because they were all way too concerned that "mommy is crying" and "please stop mommy" and "don't start again mommy!".:) anyways, God is so good - I wrote and called my boss right away (whom I have only met once over a year ago - I only work twice a month and only on the weekends), and found out that she is at a funeral in upstate new york. After putting the monkeys to bed, I decided to check my email one more time (still weaning myself off after having to be on top of the home study people 24/7):). And lo and behold - my boss had emailed me back, telling me that she would be in the office at 8am monday morning and would be happy to help in any way she could. Wow- although my weekend would have been so much better with a number:), this makes the waiting okay, as I know that monday morning it will be done and I do not have to wonder when she will be back! Thank you Father - I needed that tonight!

yeah!!!! The fedex man just left (after getting a really big hug from me - I am sure that he thinks that I am deranged:) and my incredible hubby is coming home to take our dossier to the UPS store! Of course, today is the day that we have to have a blizzard, and the kids have early dismissal, and the roads are a mess:(. But never fear -my hubby knows me so well I did not even have to ask! How I love that boy! Anyways - off to Oregon it goes and hopefully by Friday we will have a number!

well - it is almost time to post the one we have been waiting for! We just made the revisions to our home study and sent them back to the social worker, and we are just waiting for final approval from our agency, and then signatures and a fed ex truck, and we will be able to send our dossier in! Cannot wait for that post!

we received the rough draft of our home study last wednesday night, I made some corrections and sent it back to our social worker 30 minutes later. And nothing. I am told that "things are coming along" and "you are highly motivated". I think that it is all code for "we will do it when we want and it will not be any time soon". Yuck. that about sums it up for now! Hopefully my next post will be announcing our number!
